  3. 2 eggs, lightly beaten
  4. 1 cup plain flour

  6. 2 tablespoons sugar

  1. Whisk milk, oil and egg together in a jug. Place flour in a bowl. Make a well in centre. Add milk mixture. Whisk until smooth. Cover. Stand for 30 minutes.
  2. Melt butter in a 20cm (base), non-stick frying pan over medium heat. Pour 1/4 cup mixture into pan. Swirl to cover base. Cook for 1 minute or until light golden. Turn. Cook for 1 minute. Transfer to a plate. Cover to keep warm. Repeat with remaining mixture to make 8 crepes.
  3. Sprinkle crepes with sugar. Squeeze over lemon. Serve.
