  1. 1 cup plain flour
  2. 2 cups milk
  3. 3 eggs
  4. Olive oil spray
  5. 60g butter
  6. 4 large granny smith apples, peeled, cored, thinly sliced
  7. 1/2 cup firmly packed brown sugar
  8. 1 teaspoon ground cinnamon
  9. 1/2 cup pure cream

  1. Sift flour into a bowl. Whisk milk and eggs together in a jug. Add milk mixture to flour. Whisk until well combined.
  2. Spray a medium, non-stick frying pan with oil. Heat over medium heat. Pour 2 1/2 tablespoons batter into pan. Swirl to cover base. Cook for 2 to 3 minutes or until light golden. Turn over and cook for 1 minute. Transfer to a plate. Cover to keep warm. Repeat with remaining batter.
  3. Melt butter in a frying pan over medium low heat. Add apple. Cook, stirring, for 3 to 5 minutes or until lightly browned. Add sugar, cinnamon and cream. Stir to combine. Bring to the boil. Reduce heat to low. Simmer for 4 to 5 minutes or until sauce thickens.
  4. Serve crepes with apple mixture.
