  1. 3/4 cup white quinoa
  2. 2 cups shredded cooked chicken
  3. 1/4 red cabbage, finely shredded
  4. 2 carrots, finely grated
  5. 2 green onions, thinly sliced diagonally
  6. 2 teaspoons sesame seeds, toasted
  7. 2 tablespoons salt-reduced soy sauce
  8. 2 tablespoons rice wine vinegar
  9. 1 tablespoon vegetable oil
  10. 1 teaspoon sesame oil
  11. 2 teaspoons brown sugar
  12. 1/3 cup wasabi peas

  1. Place quinoa and 1 1/2 cups cold water in a medium saucepan over high heat. Cover. Bring to the boil. Reduce heat to low. Simmer for 10 to 12 minutes or until liquid is absorbed and quinoa is tender. Set aside to cool.
  2. Combine quinoa, chicken, cabbage, carrot, onion and sesame seeds in a bowl. Season with pepper. Toss to combine.
  3. Whisk soy sauce, vinegar, oils and sugar in a jug until well combined and sugar is dissolved. Drizzle over chicken
  4. Serve salad sprinkled with wasabi peas
