  1. 3 kumara, cut into wedges
  2. 2 tablespoons sunflower oil, plus extra to drizzle
  3. 1 1/4 cups coriander leaves, finely chopped
  4. 1 green chilli, seeds removed, finely chopped
  5. 2 tablespoons chopped peanuts
  6. 2 garlic cloves, finely chopped
  7. 1 teaspoon grated ginger
  8. 1 teaspoon caster sugar
  9. 2 tablespoons lime juice
  10. 2 teaspoons fish sauce

  1. Preheat the oven to 200u00b0C and line a baking tray with baking paper.
  2. Toss kumara wedges with 1 tablespoon oil, salt and pepper, then spread on the tray in a single layer. Roast for 30 minutes, turning once, until golden and tender.
  3. Meanwhile, place all the remaining ingredients (except the remaining 1 tablespoon oil) in a food processor and pulse to a coarse paste. Stir in the oil.
